Julian Simard-Gillis, Wine Director
Julian Simard-Gillis started his hospitality journey at the renown ITHQ school in Montreal, after which he deepened his wine knowledge at restaurants and wineries in Alsace, Burgundy, Languedoc, and Tuscany. Julian joined the Post Hotel in early 2018, continuing his education in fine wines under former owners George and Andre Schwarz. In June of 2022, Julian became our Wine Director and Head Sommelier. As passionate about this beautiful area as he is about fine vintages, Julian enjoys skiing, hiking, and mountain biking in his spare time.
